Wayfarer’s Root Stew

Plant-based comfort with Appalachian soul.

Warm, spiced, and nourishing—a slow-simmered stew for the traveler looking for something grounding.

Ingredients:

2 cups cubed butternut squash
2 carrots, 1 sweet potato – chopped
1 small onion, diced
2 garlic cloves
4 cups clean veggie broth
1 tbsp tomato paste
1 tsp turmeric (optional)
1 tsp smoked paprika
Sea salt + pepper to taste
Fresh parsley

Directions:

Combine all in crockpot. Stir gently.
Cook on Low for 6–7 hrs or High for 3–4 hrs

Serve:
Top with parsley. Serve with rustic cornbread or a crusty sourdough.
